The Benefits of Herbal Teas
For centuries herbs have been valued for their incredible versatility used as medicine, perfumes, foods, in religious ceremonies and as simple teas. As we approach the 21st century it may come to you as a surprise that herbs, the oldest form of medicine on our planet are still used as the primary form of medicine used by over 75% of the world's population. Herbs are in fact the traditional medicine of all cultures and are based on observation and experience passed down from generation to generation for thousands of years. As the stress of modern living increases, a basic understanding of the benefits of herbs will become more important than ever. Today there is an enormous body of scientific studies and research to validate the efficacy of herbs. 

Herbs are the forerunner of modern drug medicine. Many chemical drugs are based on compounds found in plants. For example, aspirin comes from the salicylates found in Willow bark, and heart drugs are still extracted from the foxglove, more than 200 years after their discovery. While the skilled medical herbalist will conduct a consultation to assess the problem in terms of diet, lifestyle, emotional factors and other body relationships to combine the therapeutic properties of herbs to suit the client's individual needs, even the simplest of herbal teas are able to energise, relax, restore, revitalise and assist in improved metabolic functioning. Of course its not just the therapeutic properties of the herbs that make you feel better. The very art of tea drinking can be beneficial for you as well. Take time and care in the preparation and serving of tea reflects a less hurried approach to life than the instant tea or coffee break. The whole idea of preparing a herbal tea, with its rich aromas and colours and the ritual of sitting and drinking with friends, automatically reduces stress levels.

How to Prepare Your Herbal Teas

Hot Infusion
To brew a herbal tea, add a heaped teaspoon of dried herb per cup of water, boil the water then pour over the herb in a cup or tea pot, allow to steep. If the herb is made of
plant leaves, brew for approximately 2-3 minutes, if from flowers steep a little longer (5 minutes) and if from the bark, roots, seeds or fruit allow up to 10 minutes in order to get maximum flavour and to extract all the nutritive minerals.

Cold Infusion
Cold infusions are good for delicate herbs, that lose their quality when heated. These are flowers or some soft roots, especially roots that contain mucus, such as marshmallow. Put 1 teaspoon of herb in a cup and fill with room temperature water. Cover and let sit for 8-12 hours. Strain and drink.

Decoction
Decoctions are primarily used for hard or woody plant materials such as roots, rhizomes, barks and seeds. Decoction is a form of simmering, and the material used should first be crushed, cut, broken or otherwise rendered into small pieces suitable for simmering. The method consists of placing one heaped teaspoonful of herbs, per one cup of cold water, in a saucepan and bring to the boil, simmer for 10 to 15 minutes (longer if the roots are very hard). During the entire process the saucepan or vessel being used should be kept covered. Strain before drinking.

How to Store Your Herb Teas
It is important to keep your herbs in air tight jars to keep their potency and flavour. If stored in clear glass jars it is important to keep them in the dark, as light may diminish the herbs potency. Remember that you are not the only one that enjoys the flavour and benefits of herbal teas. In hot weather weevils and other little bugs become
unwelcome users of your tea, especially if your herbs are not, kept in an air tight container. When stored carefully, herbs can remain fresh and potent for more than a year.
